5 ingredient pumpkin and gouda pizza with caramelized onions and garlic makes for the ultimate fall pizza. A base of creamy pumpkin set off by gooey gouda cheese and loads of aromatics, this cozy fall pie is worth ditching takeout for.

  • 2 Tbsp. extra-virgin olive oil
  • 1 large (or 2 small-medium) yellow onion, peeled and thinly sliced
  • 3 to 4 garlic cloves, minced
  • 1/4 to 1/2 tsp. crushed red pepper flakes (optional)
  • 1/2 tsp. kosher salt
  • 16 oz. fresh pizza dough, room temperature
  • 3/4 cup canned pumpkin puree
  • 5 oz. freshly grated gouda cheese (about 1 1/4 cups)
  • Optional: finely chopped fresh parsley for garnish

Instructions

1. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, for 7 to 8 minutes until soft.

2. Reduce heat to low and continue to cook onions, stirring every few minutes to prevent burning, until blonde-colored, 20 to 30 minutes.

3. During the final 5 minutes of caramelizing, stir in garlic, salt, and red pepper flakes (if using).

4. Place a rack in the upper-middle position of the oven and preheat to 475°F. Place a pizza stone or baking sheet on the rack.

5. On a floured surface, stretch/roll out the pizza dough to a 12 to 14-inch round. Transfer to parchment paper and pierce dough a few times with a fork.

6. Spread pumpkin puree evenly over the dough, leaving a 1/2-inch border. Top with caramelized onions and garlic mixture, then evenly sprinkle grated gouda.

7. Place the pizza (on parchment) on the preheated stone or baking sheet. Bake for 12 to 15 minutes, until crust is crisp and cheese is melted.

8. If desired, garnish with chopped parsley. Slice and serve hot.

Notes

To store: Place leftover slices in an airtight container or wrap tightly in plastic wrap and foil. Refrigerate for up to 4 days.

To reheat: Place 1–2 slices in a skillet over medium heat. Cover, reduce to medium-low, and heat until crust re-crisps and cheese melts. Adding a few drops of water to the pan (away from the pizza) helps steam the cheese.

For best flavor and texture, use high-quality dough and freshly grated gouda cheese.
