1.5 kg beef short ribs
2 medium onions, divided
2 tablespoons coriander seeds
2 tablespoons fennel seeds
34 whole cloves
4 tablespoons fish sauce
1 tablespoon ginger, sliced
2 whole star anise
1 cinnamon stick
1 package rice noodles
2 cups fresh bean sprouts
1 fresh lemon, cut into wedges
Fresh cilantro and basil leaves for garnish

Instructions

Place the beef short ribs in a large pot and cover with water, bring to a boil for 5 minutes, then drain and rinse the meat.
In a dry pan, toast the coriander seeds, fennel seeds, cloves, star anise, and cinnamon stick until fragrant.
Return meat to the clean pot with fresh water, one halved onion, the toasted spices, ginger, and fish sauce.
Simmer on low heat for 2-3 hours until the beef is tender and falling off the bone.
Cook the rice noodles according to package directions.
Discard the spices from the broth and season with extra fish sauce if needed.
Divide the noodles into bowls, top with hot broth, tender beef, bean sprouts, fresh herbs, thinly sliced raw onion, and a squeeze of fresh lemon.

Notes

Enhance the depth of flavor by searing the beef ribs lightly before boiling. You can adjust the spice level by adding fresh chili slices. Keep leftovers in the refrigerator for up to 3 days and reheat gently.
