Juicy grilled chicken skewers coated in a creamy, spicy-sweet bang bang sauce. These quick and flavorful skewers are perfect for weeknight dinners, BBQs, or party appetizers.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 810 skewers (wooden or metal; soak wooden skewers in water if using)
  • 1/2 cup mayonnaise or 1/4 cup mayo + 1/4 cup Greek yogurt
  • 2 tablespoons sriracha
  • 1 tablespoon honey or sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon chopped green onions (optional garnish)
  • 1 teaspoon sesame seeds (optional garnish)

Instructions

1. Cut the chicken into 1 to 1.5-inch chunks. Pat dry and season with salt, pepper, garlic powder, and smoked paprika, then toss with olive oil.

2. In a small bowl, mix mayonnaise, sriracha, honey, and rice vinegar (or lime juice) until smooth to make the bang bang sauce.

3. Thread the seasoned chicken pieces onto skewers, leaving small gaps between pieces for even cooking.

4. Preheat the grill to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.

5. Brush the chicken with bang bang sauce during the final minutes of grilling or drizzle the sauce over the skewers after removing from the grill.

6. Garnish with chopped green onions and sesame seeds if desired, and serve immediately with extra sauce on the side.

Notes

Soak wooden skewers in water for at least 20 minutes before grilling to prevent burning.

You can substitute chicken thighs for juicier skewers.

Adjust the sriracha amount to control the heat level.

These skewers can also be cooked in the oven or air fryer if a grill is not available.
