2 lbs beef chuck, cubed
1 tbsp olive oil
1 onion, chopped
3 carrots, peeled and sliced
3 potatoes, peeled and cubed
2 celery stalks, sliced
3 cloves garlic, minced
1 cup tomato puree
4 cups beef broth
1 tbsp apple cider vinegar or lemon juice
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste
2 tbsp cornstarch mixed with 2 tbsp water (optional for thickening)
Preheat oven to 325°F (160°C).
Heat olive oil in a Dutch oven over medium-high heat. Sear beef cubes until browned; remove and set aside.
