Blackberry Lime Fruit Salad is packed with fresh summer fruit and tossed in a bright citrus-honey dressing. It’s refreshing, light, and perfectly sweet for warm days.
1. In a medium saucepan, add the orange juice, orange zest, lemon juice and zest, lime juice and zest, and honey. Bring to a boil over medium-high heat, then reduce heat and simmer for about 5 minutes until slightly thickened.
2. Remove from heat and stir in the vanilla extract and poppyseeds. Set aside to cool.
3. In a large bowl, combine the mandarin oranges, strawberries, kiwis, grapes, blueberries, mangoes, blackberries, and raspberries.
4. Pour the cooled dressing over the fruit and gently toss to coat evenly.
5. Refrigerate to chill and allow the flavors to meld.
6. Serve chilled, tossing once more before serving.
