1. In a stand mixer, cream together butter and cream cheese until well-combined.
2. Add sugars and beat on medium-high speed for 2 minutes, scraping down sides of bowl halfway through.
3. Add egg and beat until combined.
4. Stir in vanilla extract.
5. In a separate medium bowl, whisk together flour, cornstarch, baking soda, and salt.
6. Gradually add flour mixture to the wet ingredients on low speed until completely combined.
7. Stir in white chocolate chips on low speed, scraping down the sides as needed.
8. Add colored sprinkles and stir until just combined. Mix by hand if preferred.
9. Cover dough and chill in the refrigerator for 30 minutes.
10. Preheat oven to 350°F and line cookie sheets with parchment paper.
11. Scoop and roll dough into 1 ½” balls, place on sheet, and slightly flatten.
12. Add extra sprinkles if desired.
13. Bake for 8-10 minutes, then cool on cookie sheet for at least 10 minutes before transferring to a wire rack.
