Blueberry Peach Feta Salad is a refreshing summer dish combining sweet peaches and blueberries with crisp cucumbers and salty feta, all tossed in a bright lemon basil vinaigrette.

Ingredients

Scale
  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped fresh basil
  • Kosher salt and freshly ground black pepper to taste

Instructions

1. In a large serving bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta.

2. In a jar with a lid or a measuring cup, add the lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper.

3. Shake or whisk the mixture until the vinaigrette is well combined.

4. Pour the vinaigrette over the salad ingredients.

5. Gently toss everything together until evenly coated.

6. Taste and adjust seasoning if needed, garnish with extra basil, and serve immediately or refrigerate until ready to serve.

Notes

For best flavor, use ripe peaches and fresh basil.

You can chill the salad for 20–30 minutes before serving to enhance the flavors.

If making ahead, add the feta just before serving so it stays fresh and crumbly.
