A hearty, comforting, and budget-friendly casserole made with cabbage, seasoned ground beef, tomatoes, and a creamy cheesy topping.
1 small cabbage, shredded
1½ lbs ground beef or turkey
1 large onion, chopped
½ cup red bell pepper, chopped
1 (15 oz) can diced tomatoes, undrained
½ tsp salt
¼ tsp pepper
¼ tsp sugar
1 tsp caraway seeds (optional)
1 (8 oz) can tomato sauce
1 cup reduced-fat sour cream
1 cup shredded Swiss cheese or preferred cheese
1. Preheat oven to 350°F. Grease a 9×13 baking dish.
2. Layer shredded cabbage in the bottom of the dish.
3. In a skillet, brown the beef with onion and bell pepper. Drain.
4. Stir in diced tomatoes, salt, pepper, sugar, and caraway seeds.
5. Spoon the beef mixture over the cabbage.
6. Mix tomato sauce and sour cream in a bowl, then spread over the beef layer.
7. Cover with foil and bake for 1 hour.
8. Uncover, sprinkle with cheese, and bake an additional 15–20 minutes.
9. Let rest 10 minutes before serving.
Feel free to use ground turkey instead of beef for a lighter option. Add extra spices like garlic or smoked paprika for added depth of flavor. Monterey Jack, cheddar, or mozzarella are all great substitutes for Swiss cheese.
