  • 1 cup orzo pasta
  • 1 pound ground beef (or turkey for a leaner option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 cup beef broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickles, chopped
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

2. In the same pot, heat a splash of oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

3. Add the minced garlic to the onions and cook for an additional minute until fragrant.

4. Introduce the ground beef to the pot, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

5. Stir in the tomato paste, Worcestershire sauce, and beef broth, mixing well to combine. Bring to a simmer.

6. Add the cooked orzo pasta to the pot, followed by the shredded cheddar cheese, chopped pickles, ketchup, and mustard. Stir until the cheese has melted and everything is well combined.

7. Season with salt and pepper to taste. Adjust any flavors as needed.

8. Remove from heat and let sit for a couple of minutes to allow flavors to meld.

9. Serve warm, garnished with fresh parsley on top.

Notes

For a lighter version, use ground turkey and low-fat cheese. Add extra veggies like diced tomatoes or shredded lettuce for more texture. Leftovers can be stored in the fridge for up to 3 days and reheated on the stovetop or microwave.
