4 salmon fillet (about 6 oz each), skin on
1 1/2 tsp chili powder (adjust to taste)
1 tsp ground paprika
1 tsp salt
1/2 tsp black pepper
1 tbsp lime juice
1 tbsp olive oil
1 ripe peach, diced
1/4 red bell pepper, diced
2 tbsp red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tbsp lime juice, for salsa
1 tbsp olive oil, for salsa
Optional: 1/2 tsp honey for slight sweetness
Preheat oven to 400°F (200°C)
Pat salmon dry and season both sides with chili powder, paprika, salt, and pepper
Drizzle olive oil and lime juice over the salmon, and set aside
