  • 1 teaspoon fine salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley

Instructions

1. In a large bowl, toss chicken with salt, black pepper, smoked paprika, and garlic powder until evenly coated.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken in batches and cook for 5 to 7 minutes, turning occasionally, until golden and cooked through. Transfer to a plate and set aside.

3. In the same skillet, melt unsalted butter over medium heat. Stir in minced garlic and cook for 30 seconds until fragrant. Add lemon juice, Dijon mustard, red pepper flakes, and chopped parsley. Stir to combine and cook for 1 minute.

4. Return the cooked chicken to the skillet, tossing to coat evenly in the cowboy butter sauce. Let simmer for 1 minute to infuse flavors.

5. Top with extra chopped parsley and serve immediately while hot.
