1 tablespoon unsalted butter
1 medium yellow onion, finely chopped
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups chicken broth (low-sodium)
2 cups half-and-half
4 cups broccoli florets (12 ounces fresh broccoli)
1 cup shredded sharp cheddar cheese
Salt and pepper to taste
Melt 1 tablespoon butter in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes.
Add 1/4 cup butter and 1/4 cup flour; whisk until a smooth paste (roux) forms.
Gradually pour in chicken broth, whisking constantly to prevent lumps. Bring to a simmer.
Stir in half-and-half and broccoli florets. Simmer for 10 minutes until broccoli is tender.
Reduce heat and stir in cheddar cheese until fully melted. Season with salt and pepper.Blend 1/3 of the soup using an immersion blender for a velvety texture, if desired. Add more salt and pepper to taste.
For extra richness, swap 1 cup broth with melted evaporated milk.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Serve with croutons or a sprinkle of cheddar for added texture.
