1 red bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
2 cups salsa (mild or medium, no alcohol)
2 tbsp lime juice
1 tsp ground cumin
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Tortillas (warm flour or corn), for serving
Garnishes like avocado, cilantro, lime, and plain yogurt

Instructions

In a medium bowl, combine salsa, lime juice, cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper to make the seasoning.
Place sliced chicken and vegetables in the bottom of the crockpot.
Pour the seasoning mixture over the chicken and vegetables, ensuring everything is evenly coated.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Taste and adjust seasoning if needed.
