4 bone-in chicken thighs
1 cup chopped onions
2 cloves garlic, minced
1 cup chopped sun-dried tomatoes
1 (10.5 oz) can cream of mushroom soup
1/2 cup sour cream
1 cup orzo pasta
1 cup baby spinach
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 cups chicken broth

Instructions

Remove chicken skin but leave bones in; season with salt and pepper
Dredge chicken in flour until evenly coated
Heat olive oil in a skillet; cook onions and garlic 3-4 minutes until translucent
Add chicken to skillet and cook until golden brown on both sides
Transfer chicken to slow cooker and pour sautéed onions/garlic over it
Combine sun-dried tomatoes, cream of mushroom soup, Italian seasoning, and chicken broth in a bowl; pour over chicken
Cook on low 6-8 hours or high 3-4 hours until chicken is tender
Stir in orzo pasta and cook until tender (30-60 minutes)
Add baby spinach and stir until wilted
Stir in sour cream until sauce thickens; adjust seasoning if needed

Notes

For non-canned alternatives, use 2 cups sautéed mushrooms instead of soup
Leftovers freeze well for up to 3 months
Can substitute orzo with farro or small pasta
Ensure sun-dried tomatoes used are salted appropriately; reduce added salt if necessary
