  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, diced
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In the prepared dish, combine uncooked rice, chicken broth, tzatziki sauce, oregano, garlic powder, salt, and pepper. Stir until well mixed.

3. Add the cooked chicken, cucumber, cherry tomatoes, and red onion. Mix gently and spread evenly in the dish.

4. Cover tightly with foil and bake for 35–40 minutes, or until rice is fully cooked and most of the liquid is absorbed.

5. Remove foil, sprinkle shredded mozzarella evenly on top, and bake uncovered for an additional 5–7 minutes until the cheese is melted and bubbly.

6. Allow the casserole to rest for 5 minutes before serving.

7. Garnish with fresh parsley before serving.
