1.5 lbs beef sirloin or flank steak, thinly sliced
1/4 cup cornstarch
1/4 cup soy sauce (or tamari for gluten-free)
1/2 cup beef broth
1/4 cup packed brown sugar
3 cloves garlic, minced
1 teaspoon grated fresh ginger (optional)
1–2 pounds broccoli florets
2 tablespoons vegetable oil
Salt and pepper to taste
Toss the thinly sliced beef with cornstarch until evenly coated. Set aside.
In a medium bowl, whisk together soy sauce, beef broth, brown sugar, minced garlic, and grated ginger (if using). Pour half of this sauce into the bottom of your slow cooker.
Add the cornstarch-coated beef to the slow cooker, spreading it in an even layer over the sauce.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the beef is tender.
In the last 30 minutes of cooking, stir in the broccoli florets.
Pour the remaining sauce mixture over the broccoli and beef.
Continue to cook until the broccoli is crisp-tender and the sauce has thickened slightly.
If the sauce is not thick enough, you can make a slurry with 1 tablespoon cornstarch and 2 tablespoons water, stir it into the slow cooker, and cook for another 15-20 minutes.
Season with salt and pepper to taste before serving.
For a deeper flavor, you can marinate the beef in some of the soy sauce mixture for at least 30 minutes before adding the cornstarch.
Ensure broccoli florets are of similar size for even cooking.
Serve hot over steamed rice or quinoa for a complete meal.
