Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) crushed tomatoes
  • 12 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

1. In a large pot, brown the ground beef over medium heat. Add chopped onion and minced garlic, cooking until the onion is translucent.

2. Add the beef broth, crushed tomatoes, and Italian seasoning to the pot. Bring to a simmer.

3. Stir in the broken lasagna noodles and cook until al dente, about 10-12 minutes.

4. Remove from heat and stir in the ricotta and half of the mozzarella cheese until melted. Serve hot, topped with remaining mozzarella.

Notes

For added flavor, use Italian sausage instead of ground beef or mix the two. Garnish with fresh basil or a sprinkle of Parmesan cheese for a classic touch. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
