A refreshing, Greek-inspired cold pasta salad with a creamy tzatziki dressing made from Greek yogurt, cucumber, and herbs. Combining tender pasta, crisp vegetables, and tangy flavors, this dish is perfect for picnics, BBQs, or a light lunch. It’s easy to customize and brings a zesty twist to traditional pasta salads.

Ingredients

8 ounces rotini pasta
1 cup Greek yogurt
1 medium cucumber, finely diced
1 bell pepper, diced
1/4 cup chopped fresh dill
1 clove garlic, minced
2 tablespoons fresh lemon juice
1/4 cup olive oil
2 tablespoons chopped red onion
1/2 cup black olives
dried oregano to taste
salt and pepper to taste

Instructions

Cook the rotini pasta according to package instructions. Drain and rinse with cold water, then pat dry.
In a blender or food processor, combine Greek yogurt, cucumber, garlic, dill, lemon juice, and olive oil. Blend until smooth. Taste and adjust seasoning with salt and pepper.
In a large bowl, mix cooked pasta with bell pepper, red onion, and black olives.
Pour the tzatziki dressing over the pasta mixture and stir to coat evenly.
Chill for 15–30 minutes before serving to let flavors meld.

Notes

Rotini pasta holds dressing best, but gluten-free pasta can be substituted.
Fresh vegetables can be added for crunch (e.g., cherry tomatoes, spinach). For a main dish, include grilled chicken or chickpeas.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
