  • 12 ounces dry pasta (penne or fusilli)
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • 4 ounces feta cheese, crumbled
  • 1/2 medium red onion, peeled and thinly sliced

For the Dressing

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon honey or preferred sweetener
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 teaspoon salt
  • Pinch crushed red pepper flakes (optional)

Instructions

1. Cook the pasta al dente in salted water according to package directions. Drain and rinse under cold water to cool.

2. Whisk together the olive oil, vinegar, lemon juice, oregano, honey, garlic, black pepper, salt, and crushed red pepper flakes until well combined.

3. In a large mixing bowl, combine the diced cucumber, halved tomatoes, olives, feta cheese, and sliced red onion.

4. Add the cooled pasta to the bowl with the vegetables.

5. Pour the dressing over the salad and gently toss until everything is evenly coated.

6. Chill the pasta salad for at least 30 minutes before serving for the best flavor.

Chilling the salad for at least 30 minutes enhances the flavor as the dressing soaks into the ingredients.
