Tender chicken and al dente pasta tossed in a rich garlic butter sauce for a quick, comforting weeknight meal. A perfect balance of savory and aromatic flavors that’s easy to make and even more satisfying to eat.

1 pound thinly sliced chicken breasts
12 oz pasta (penne, fettuccine, or spaghetti)
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon olive oil
Salt and black pepper, to taste
1 teaspoon dried parsley (or fresh, chopped)
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
2 tablespoons chicken broth or water
1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

Heat a large skillet over medium-high heat and add olive oil. Sear the chicken slices for 3-4 minutes per side or until golden and cooked through. Set aside on a plate.
Reduce heat to medium and add 2 tablespoons of butter to the same skillet. Sauté the garlic for about 1 minute until fragrant.
Stir in the cooked chicken back into the pan, then add chicken broth or water. Simmer for 1-2 minutes, coating the chicken with the garlic butter mixture.
While the chicken simmers, cook the pasta according to package instructions until al dente. Drain.
Return the cooked pasta to the skillet with the chicken, or transfer the garlic butter sauce to a large bowl with the pasta and stir to combine.
Sprinkle with grated Parmesan cheese, if using, and fresh parsley. Taste and adjust salt and pepper as needed.
Serve warm in bowls and enjoy your comforting, easy meal.

Notes

For a dairy-free version, substitute butter with vegan butter and omit the Parmesan, or use a vegan cheese alternative.
You can use leftover cooked chicken or even chicken thighs for extra flavor.
