Crispy oven-roasted cauliflower tossed with garlic, Parmesan, and Italian herbs for a flavorful, cheesy side dish that’s simple and satisfying.

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped
  • Red pepper flakes (optional)
  • Lemon zest (optional)
  • Toasted pine nuts (optional)
  • Panko breadcrumbs (optional)
  • Balsamic glaze (optional)
  • Extra grated Parmesan for serving
  • Fresh lemon wedges for serving

Instructions

1. Remove the leaves and core from the cauliflower and cut it into evenly sized bite-sized florets.

2. Rinse the florets under cold water and dry thoroughly with a kitchen towel or paper towels.

3. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.

4. In a large bowl combine olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.

5. Add the cauliflower florets to the bowl and toss until evenly coated in the garlic-oil mixture.

6. Sprinkle the Parmesan cheese over the cauliflower and toss again so the florets are lightly coated.

7. Spread the cauliflower in a single layer on the prepared baking sheet, leaving space between pieces.

8. Roast for 25–30 minutes, tossing halfway through, until the cauliflower is tender and golden brown with crispy edges.

9. Remove from the oven and transfer to a serving dish.

10. Garnish with fresh parsley and extra Parmesan, and serve with lemon wedges if desired.

Notes

Drying the cauliflower well helps it roast instead of steam, giving crispier edges.

For extra crunch, sprinkle panko breadcrumbs over the cauliflower before roasting.

Add red pepper flakes for heat or lemon zest for a bright citrus flavor.

Drizzle with balsamic glaze just before serving for a sweet and tangy finish.
