This easy green bean casserole is a must-make for Thanksgiving. It’s creamy, cheesy, and topped with crispy fried onion rings—a classic side dish made with fresh or frozen green beans.

Ingredients

  • 2 lbs fresh French style green beans
  • 4 tbsp salted butter
  • ½ medium yellow onion, diced
  • Pinch of salt
  • Pinch of pepper
  • ¼ tsp season-all season salt
  • 10.5 oz can cream of mushroom soup
  • ¼ cup half and half
  • 1 cup medium cheddar cheese, grated and divided
  • 6 oz French fried crispy onion rings

Instructions

1. Preheat oven to 350°F.

2. Boil the green beans in water until they are between al dente and soft, depending on your preference. Drain and set aside.

3. In a sauté pan over medium-low heat, melt the butter and cook the diced onion until soft.

4. Season with salt, pepper, and season-all salt.

5. Stir in the cream of mushroom soup and half and half. Bring to a very low boil, then reduce heat to low.

6. Add a small handful of the grated cheddar cheese and stir until melted. If the sauce is too thick, add a few splashes of half and half.

7. Add the cooked green beans and ⅔ of the crispy fried onions to the sauce. Mix everything together.

8. Spray a 9×13 casserole dish with nonstick spray and pour the green bean mixture in.

9. Top with the remaining grated cheese and the rest of the crispy fried onions.

10. Bake uncovered for 30 minutes, until bubbly and golden on top.

Notes

Frozen Green Beans: Substitute frozen green beans if preferred, but reduce the amount by 25% when weighing.

Purchasing Tip: Costco carries excellent French style green beans at a great value.

Cheese Tip: Always use freshly grated cheese for the best melt and flavor. Pre-grated cheese doesn’t melt as smoothly.
