  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tbsp green food coloring

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp heavy cream

  • Green sprinkles
  • Shamrock toppers
  • White chocolate shavings

Instructions

1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.

2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

3. In a separate large bowl, whisk together buttermilk, oil, sugar, egg, vanilla extract, and vinegar.

4. Stir in the food coloring until the batter turns a vibrant green.

5. Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.

6. Fill each cupcake liner about ⅔ full and bake for 16–18 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

7. Beat the butter and cream cheese together until smooth and fluffy.

8. Mix in powdered sugar gradually, then add vanilla and heavy cream, beating until light and creamy.

9. Frost the cooled cupcakes and decorate with sprinkles, toppers, or white chocolate shavings.

Notes

Add mini chocolate chips to the batter for a richer twist.

For an extra festive touch, swirl in edible gold glitter on top.
