4 salmon fillets (about 1 inch thick, cut into 1 1/2-inch cubes)
1/3 cup soy sauce (or tamari for gluten-free)
1/4 cup honey
2 garlic cloves, minced
1-inch piece of ginger, grated
Juice of 2 limes
Zest of 1 lime
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro or green onions, for garnish
8 wooden or metal skewers
Wedges of lime for serving
In a bowl, mix together soy sauce, honey, minced garlic, grated ginger, lime juice, lime zest, and olive oil to create the marinade.
Add the salmon cubes to the bowl and toss gently to coat. Let marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor.
