2 cups shredded cooked chicken (grilled or boiled)
1 cup frozen sweet corn, thawed
1 cup canned black beans, drained and rinsed
1/4 red onion, finely chopped
1/2 red bell pepper, diced
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
2 tablespoons light mayonnaise
2 tablespoons plain Greek yogurt
1 teaspoon mild salsa
1/2 teaspoon taco seasoning
2 tablespoons chopped green onion (optional)
1 ripe avocado, diced (optional)

Instructions

In a large bowl, combine shredded chicken, corn, black beans, red onion, and red bell pepper.
In a small bowl, whisk together lime juice, mayonnaise, Greek yogurt, salsa, and taco seasoning.
Pour dressing over salad and toss gently to coat.
Stir in cilantro and green onion. Fold in avocado (if using) just before serving.

Notes

Use pre-cooked chicken to save time. Add cherry tomatoes or shredded carrots for extra color. Store leftovers in an airtight container in the fridge for up to 2 days. For extra creaminess, mix 1/4 cup plain yogurt into the dressing.
