Sweet and smoky honey BBQ chicken baked over creamy garlic parmesan potatoes. This comforting one-pan dinner features tender caramelized chicken thighs and rich, cheesy potatoes perfect for family meals or cozy gatherings.
For the Honey BBQ Chicken:
For the Creamy Garlic Parmesan Potatoes:
1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
2. In a bowl season the chicken thighs with paprika, onion powder, garlic powder, salt, and black pepper. Drizzle with oil and toss to coat. Set aside while preparing the potatoes.
3. In a medium saucepan melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
4. Whisk in the flour and cook for another minute to create a roux, stirring constantly.
5. Slowly pour in the milk while whisking to prevent lumps. Add salt, garlic powder, and onion powder and simmer for about 5 minutes until slightly thickened.
6. Stir in the Parmesan cheese and a handful of mozzarella until melted and smooth. Remove from heat.
7. Layer the thinly sliced Yukon gold potatoes evenly in the greased baking dish.
8. Pour the creamy garlic parmesan sauce over the potatoes making sure all slices are coated.
9. Place the seasoned chicken thighs on top of the potatoes and brush generously with honey barbecue sauce.
10. Cover the dish with foil and bake for 40 minutes.
11. Remove the foil and continue baking for 15–20 minutes until the chicken is caramelized and the potatoes are tender and bubbling.
12. Optional: Broil for 2–3 minutes at the end for a golden, lightly crisp top.
Russet or red potatoes can be substituted for Yukon gold potatoes if needed.
For added color and freshness garnish with chopped parsley or green onions before serving.
If you prefer extra cheesy potatoes sprinkle a little additional mozzarella on top during the final 10 minutes of baking.
