Sweet and savory honey glazed carrots & green beans, perfectly roasted with garlic, thyme, and balsamic glaze for an elegant, flavor-packed side dish.

  • 1 pound fresh carrots, peeled and sliced into uniform pieces
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon chopped fresh thyme)
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped fresh parsley or toasted sesame seeds for garnish

Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash and trim green beans; peel and cut carrots into 1-inch diagonal pieces to match in size.

3. In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, thyme, salt, and pepper until well combined.

4. Place the carrots and green beans in a large bowl. Pour the glaze over and toss to coat thoroughly.

5. Spread the vegetables in a single layer on a baking sheet. Do not overcrowd.

6. Roast for 20–25 minutes, until carrots are tender and green beans are crisp-tender, stirring halfway through.

7. For extra caramelization, broil for 1–2 minutes at the end, watching carefully.

8. Remove from oven and let rest for a few minutes. Garnish with parsley or sesame seeds if desired.

9. Serve immediately while hot and enjoy!

Notes

For extra flavor, add a squeeze of lemon juice after roasting.

To make it vegan, substitute honey with maple syrup or agave.

To prepare ahead, cut vegetables and mix glaze a day in advance.

Pairs beautifully with roasted meats, baked salmon, or vegetarian mains.

Leftovers can be refrigerated for up to 3 days and reheated in the oven at 350°F.
