A comforting, cheesy King Ranch Chicken Casserole layered with chicken, tomatoes, spices, and tortilla chips for a cozy, crowd-pleasing meal.
1. Preheat oven to 350°F (175°C). In a skillet over medium heat, heat olive oil and sauté chopped onion and minced garlic until translucent.
2. Stir in shredded chicken, diced tomatoes, cream of chicken soup, chicken broth, chili powder, and cumin until well combined and heated through.
3. Layer crushed tortilla chips at the bottom of a baking dish. Add half the chicken mixture followed by half the shredded cheese. Repeat layers.
4. Cover with foil and bake for 25 minutes. Remove foil and bake another 15 minutes until cheese is bubbly and golden brown.
5. Let cool for 10 minutes before serving, garnished with cilantro if desired.
For added spice, use hot diced tomatoes with chilies. You can also substitute Monterey Jack cheese or add sliced jalapeños for extra flavor.
