1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces fettuccine or penne pasta
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1 medium onion, finely chopped
3 cloves garlic, minced
1/4 cup olive oil
2 tablespoons butter (substitute for lard)
2 tablespoons Cajun seasoning
1 teaspoon crushed red pepper flakes (optional)
2 cups heavy cream
1 cup whole milk
1/4 cup grated Parmesan cheese, optional
Salt and black pepper to taste
Fresh parsley, chopped (optional for garnish)

Instructions

Heat olive oil and butter in a large skillet over medium-high heat.
Add chicken pieces and sauté until browned and cooked through, about 5-7 minutes.
Remove chicken from skillet and set aside.
In the same skillet, add onions, garlic, and bell peppers. Cook until softened, about 5 minutes.
Stir in Cajun seasoning, red pepper flakes (if using), and a pinch of salt and pepper.
Pour in heavy cream and milk, bringing the mixture just to a simmer.
Reduce heat to medium-low and let the sauce thicken, stirring occasionally.
Return cooked chicken to the skillet and stir to coat in the sauce.
Cook for an additional 2-3 minutes until everything is well combined and heated.
Toss cooked pasta with the mixture until evenly coated.
Sprinkle grated Parmesan cheese over the top, if using, and garnish with parsley before serving.

Notes

For a meat-free version, substitute chicken with large firm tofu or chickpeas.
You can substitute the heavy cream with a non-dairy alternative for a lighter version.
Leftovers can be refrigerated for up to 3 days.
