This Low Carb Unstuffed Cabbage Casserole is a hearty one-pot meal full of lean protein and nutritious vegetables. A keto-friendly, family-friendly dinner ready in just 30 minutes.
1. Saute oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
2. Add garlic and saute 1 more minute.
3. Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
4. Top with cheese, cover until melted then serve.
Add 1/4 cup water if the cabbage doesn’t release enough liquid during cooking.
Serve as-is for a low-carb meal or with a side of rice for non-keto family members.
