1.5 lbs boneless, skinless chicken breasts
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sea salt
1/4 tsp black pepper
1 cup cherry tomatoes, halved
1 cup corn kernels
1 cup frozen or canned black beans, drained and rinsed
1 cup diced red bell pepper
1 cup shredded Mexican cheese blend
1/4 cup chopped fresh cilantro
1/2 cup salsa (mild or medium)
2 tbsp olive oil
68 sheets of heavy-duty aluminum foil (12x12 inches)

Instructions

Preheat oven to 400°F (200°C)
In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to make the spice blend.
Drizzle olive oil over chicken breasts and season evenly with the spice mix.
On each piece of aluminum foil, place one chicken breast
Add cherry tomatoes, corn, black beans, red bell pepper to each packet
Pour 2 tbsp of salsa over the chicken
Fold the foil around the ingredients, sealing tightly to form a packet.
Place packets on a baking sheet and bake for 25-30 minutes or until the chicken is fully cooked.
Open packets carefully (steam will escape) and sprinkle cilantro before serving.

Notes

Grilling the foil packets instead of baking gives a slightly charred flavor.
Customize with other vegetables like zucchini or mushrooms.
Each packet can be made individually for easy portion control.
Leftover meals can be refrigerated for up to 3 days.
