1.5 lbs boneless, skinless chicken thighs
2 tbsp butter
1 medium onion, chopped
3 cloves garlic, minced
3 cups frozen mixed vegetables (peas, carrots, corn)
2 cups peeled and cubed potatoes
2 cups chicken stock
1 cup milk
1/4 cup all-purpose flour
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 1/2 cups biscuit dough or 2 cups flour, 1 tbsp sugar, 1 tsp baking powder, 1/2 tsp salt, 1/2 cup softened butter, 3/4 cup milk, 1 egg
Preheat oven to 400°F (200°C)
Sauté chicken in butter until browned; set aside
Cook onions and garlic in remaining butter
Add flour and stir to make a roux
Gradually whisk in chicken stock and milk; bring to a boil
