1. Heat olive oil in a large pot or deep skillet over medium heat.
2. Add the chicken pieces and season with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until lightly browned.
3. Stir in the uncooked rice and the can of Rotel tomatoes with green chilies. Cook for 1–2 minutes while stirring.
4. Pour in the chicken broth and bring the mixture to a boil.
5. Reduce the heat to low, cover the pot, and simmer for 20–25 minutes until the rice is tender and the liquid is absorbed.
6. Stir in the nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
7. Turn off the heat, sprinkle the remaining cheese on top, cover, and let sit for 5 minutes until the cheese melts.
