Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 3 medium potatoes (Yukon Gold or Russet), diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. In a skillet over medium-high heat, heat olive oil and brown the beef cubes on all sides (about 5 minutes). Transfer to the crock pot.

2. In the same skillet, sauté onions and garlic until soft (3-4 minutes). Add to the crock pot.

3. Add carrots and potatoes to the crock pot.

4. Pour in beef broth mixed with tomato paste and stir in thyme and bay leaves.

5. Cover and set the crock pot to low for 7-8 hours or high for 4-5 hours until the beef is tender.

6. Taste and adjust seasoning if needed before serving with fresh parsley garnish.

Notes

For optimal flavor, sear the beef before adding it to the crock pot.

Store leftovers in the refrigerator for up to 3 days in an airtight container.

Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed.

A splash of Worcestershire sauce can deepen the flavor before serving.

Garnish with fresh parsley and serve with crusty bread or over rice for a hearty meal.
