Feel Better Chicken Soup with lemon and ginger. A simple, healthy, low-carb chicken soup that’s comforting, flavorful, and easy to make on the stovetop.
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, garlic, and ginger and sauté until fragrant, about 3–4 minutes.
2. Lower heat to medium-low and continue sautéing until lightly golden, 3–4 more minutes.
3. Add chicken broth, water, salt, white pepper, bay leaves, and chicken. Bring to a boil.
4. Cover and reduce heat to a gentle simmer. Cook 20 minutes, or until chicken is cooked through.
5. Remove chicken and shred with two forks. Return shredded chicken to the pot.
6. Simmer gently for 5 more minutes.
7. Add lemon juice to taste and adjust seasoning with salt if needed.
8. Serve on its own or ladled over cooked rice or noodles.
9. Garnish with scallions, herbs, chili flakes, and optional sesame oil.
For extra flavor, bone-in or skin-on chicken thighs may be seared first before simmering.
Soup keeps up to 4 days in the refrigerator and freezes well.
Pasta or rice is best cooked separately and added when serving to keep the broth clear.
