Enjoy mouthwatering Slow Cooker Peanut Chicken for hands-off weeknight meals! With only 5 minutes of prep time and drenched in a Thai-inspired peanut sauce, it’s an easy chicken dinner that’s packed with flavor and protein.

  • For the chicken:
  • 1.5 lb chicken breasts
  • 1 red bell pepper, diced
  • 1/2 large yellow onion, diced
  • 2 garlic cloves, chopped
  • For the sauce:
  • 1/2 cup peanut butter, creamy (or use crunchy, but with minimal ingredients)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped

Instructions

1. Add the bell pepper, onion and garlic to the bottom of your slow cooker, then place the chicken breasts on top.

2. In a bowl or glass measuring cup, whisk the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste together.

3. Pour the sauce over the chicken, then cook on HIGH for 2-3 hours or on LOW for 4-5 hours.

4. Remove the lid, then stir in the lime juice and cilantro. Enjoy!
