1.5 lbs boneless, skinless chicken thighs
2 cups chicken broth
1/2 cup honey
1/4 cup soy sauce (low sodium preferred)
2 tbsp ketchup
2 tbsp sesame oil
3 cloves garlic, minced
1 tbsp Sriracha (optional for heat)
1/4 cup sesame seeds (divided, lightly toasted)

Instructions

Coat chicken thighs with soy sauce and let marinate for 10 minutes.
Place chicken in slow cooker; pour chicken broth into the base, then add garlic, honey, ketchup, sesame oil, and Sriracha into the broth.
Secure the slow cooker lid and cook on LOW for 6–8 hours or HIGH for 3–4 hours, turning thighs halfway.
Once chicken is tender, transfer to a bowl but retain sauce from the slow cooker.
Simmer sauce on the stovetop until thickened, then toss with chicken.
Sprinkle with additional sesame seeds before serving.
