1.5 lbs boneless, skinless chicken breasts
2 cups romaine lettuce, chopped
1 cup bell peppers (red, yellow, or orange), chopped
1/2 cup sweet corn kernels
1/2 cup canned black beans, drained and rinsed
2 avocados, diced
1/4 cup light mayonnaise
1 tablespoon sour cream
2 tablespoons honey
1 teaspoon chipotle powder
1 teaspoon Dijon mustard
1 tablespoon lime juice
1/4 cup chopped cilantro (optional)

Instructions

Preheat oven to 375°F (190°C)
Season chicken breasts with salt, pepper, 1/2 tsp chipotle powder, and 1 tbsp lime juice
Bake chicken for 25-30 minutes, until fully cooked
In a large bowl, combine romaine, bell peppers, corn, black beans, and avocado
In a separate small bowl, whisk together mayonnaise, sour cream, honey, remaining chipotle powder, Dijon mustard, and lime juice
