2 tablespoons red curry paste (use vegan/pescatarian version)
1 (13.5 oz) can full-fat coconut milk
4 cups vegetable broth
8 oz egg noodles (or rice noodles)
1 medium carrot, julienned
1 red bell pepper, thinly sliced
2 cups broccoli florets
2 tablespoons lime juice, plus extra to taste
10 fresh Thai basil leaves, roughly torn
