A refreshing and vibrant tropical slaw made with crisp cucumbers, sweet mango, colorful vegetables, and a zesty chili lime dressing. Perfect as a light summer side dish or taco topping.

  • 2 cups cucumber, thinly sliced
  • 1 cup mango, diced
  • 1 cup red cabbage, shredded
  • 1/2 cup carrots, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

1. In a large bowl, combine the cucumber, mango, red cabbage, carrots, red onion, and cilantro. Toss gently to mix the ingredients evenly.

2. In a small bowl, whisk together the lime juice, honey (or agave syrup), chili powder, salt, and pepper until well combined.

3. Drizzle the chili lime dressing over the slaw and toss gently to coat all the ingredients. Adjust seasoning if necessary.

4. Let the slaw sit for about 10 minutes to allow the flavors to meld before serving.

5. Serve chilled or at room temperature as a vibrant side dish or topping for tacos.

Notes

For a spicier kick, add more chili powder or diced jalapeños.

This slaw can be made a few hours in advance; just keep it refrigerated until serving.
