Enjoy a vibrant Tzatziki Chicken Salad that combines juicy grilled chicken with creamy tzatziki and fresh veggies, perfect for warm days or meal prep.

Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium Persian cucumber, diced and drained
  • 2 tablespoons fresh dill, chopped
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: diced red onion or bell peppers
  • Optional: feta cheese for topping

Instructions

1. Preheat a grill or skillet over medium-high heat.

2. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked.

3. While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, garlic, cucumber, dill, lemon juice, olive oil, salt, and pepper in a bowl until smooth.

4. Dice any additional vegetables like red onion or bell peppers and place them in a large bowl.

5. Let the cooked chicken cool slightly, then chop into bite-sized pieces.

6. Add the chicken to the bowl with vegetables and pour the tzatziki over top.

7. Gently toss everything together until evenly coated.

8. Serve over mixed greens or stuffed into pita pockets, garnished with extra dill or feta if desired.

Notes

Marinate the chicken for at least 30 minutes before cooking for deeper flavor.

Drain cucumber well to prevent watery dressing.

Substitute chicken with chickpeas or grilled tofu for a vegetarian option.

Add feta cheese for extra richness and tang.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
